2002 Dowie Doole Cabernet Sauvignon
<p>Deep red in colour. A complex nose of ripe, sweet, dark berries with Cabernet mintiness evident and a touch of coffee from the oak maturation.</p>
<p>The palate is rich and full featuring long, savoury and dark-berried flavours and cabernet choc-mint characters. Aged in a combination of new, second and third use French oak hogsheads the oak is very well integrated leaving the wine with a soft, rounded tannin finish. 2002 Reschke Empyrean Coonawarra Cabernet Sauvignon
<p><em>&lsquo;Latin for the highest sphere in which the purist elements of life exist&rsquo;. </em></p>
<p>Entirely worthy of its namesake, the Empyrean is the flagship of the Reschke range and is only produced in limited quantities from exceptional vintages. Only the most magnificent fruit from Reschke&rsquo;s oldest, low yielding vines is utilized in the Empyrean. Vinified using traditional fermentation techniques with subsequent malolactic fermentation and maturation completed in the finest, tightly grained French oak barriques, the Empyrean is a classic example of Coonawarra Cabernet. The 2004 season was characterized by a very warm, dry start with the hottest December on record. Dry but cooler conditions prevailed over the growing season. Vintage was late but the fruit achieved optimum ripeness and flavour intensity. This wine follows our previous releases in having good fruit expression but restrained use of oak and secondary wine making influences. 2005 Catherine Vale Chardonnay
<p>Our flagship Catherine Vale Chardonnay from the Hunter Valley of New South Wales is made from our own meticulously hand picked fruit.</p>
<p>Spicy peach, melon and pear fruit characteristics are revealed and the partial barrel and then malo-lactic fermentation with extended lees contact adds dimension and length to the wine. </p>
<p>The careful integration of fruit and subtle American oak provides the gratifying creamy dry finish so special to Catherine Vale Chardonnay. </p> [view wine...]
2005 Catherine Vale Dolcetto
<p>The pioneering plantings of Dolcetto at Catherine Vale are unique in the Hunter Valley of New South Wales.&nbsp; The initial cuttings were sourced from Bests at Great Western.</p>
<p>The delicate smoky almond and earthy aromas have undertones of berry and white peach and some clove and oriental spice is the result of fermentation and maturation in American oak. </p>
<p>Soft mouth entry and acidity herald rich mid palate fruit flavours of anise and fine tannin.&nbsp; The finish is dry and oaky with subtle cherry flavours and the wine is excellent with Asian and Mediterranean cuisine. </p> [view wine...]

Very pale straw in colour. </p>
<p>Cut grass, meadow hay, and green fruits on the nose. The palate shows&nbsp; tropical and green fruits and honeydew melon with excellent intensity and length, finishing with bright, crisp acidity.</p>
<p>The 2006 Chenin Blanc lends itself to a wide range of foods such as fish, crustaceans, vegetables and lighter spicy oriental dishes. Serve chilled at around 10&ordm;C.</p>
<p>This is the tenth release of Dowie Doole Chenin Blanc.&nbsp; Again we have chosen to bottle the wine with a screw-cap closure to retain optimum freshness and ensure freedom from cork taint.</p>

2002 EmpyreanVintage - 2002

Variety - Cabernet Sauvignon 87%, Merlot 10%, Cabernet Franc 3%

Region - Coonawarra – South Australia

Colour - Deep crimson, almost black.

Bouquet - Fragrant and perfumed with hints of spearmint and violets at first. After a little time in the glass there is a rich amalgam of plums, currants and cedar. 

Palate - Currant and cedar flavours with fruit sweetness and fine dry tannins with intensity and balance. The long aftertaste is of black currant and dark chocolate.

Recommended Cellaring - 10+ years

Vineyard Details - The Reschke Vineyards are situated in the premium Coonawarra region of South Australia.

Maturation - 20 months in new, lightly toasted tight grained French oak barriques.

Alcohol - 14%

Wine Makers Comments - Peter Douglas
The 2002 vintage had a very mild autumn which led to slow even fully ripened grapes. As some would say ‘an extended period of good hang time’. The fruit characters are fragrant and concentrated making it a good accompaniment to grilled meats and hard cheeses. Decanting, although not necessary, is recommended.

A classic example of a Coonawarra Cabernet Sauvignon, it has typical sweet middle palate and real Cabernet/currant-like persistence, both necessary for it to become a great wine when cellared in appropriate conditions for 3 to 5 years. It will hold this intensity of fruit flavour for many years.
