A complex nose of ripe, sweet, dark berries with Cabernet mintiness evident and a touch of coffee from the oak maturation.</p> <p>The palate is rich and full featuring long, savoury and dark-berried flavours and cabernet choc-mint characters. Aged in a combination of new, second and third use French oak hogsheads the oak is very well integrated leaving the wine with a soft, rounded tannin finish. <p><em>‘Latin for the highest sphere in which the purist elements of life exist’. </em></p> <p>Entirely worthy of its namesake, the Empyrean is the flagship of the Reschke range and is only produced in limited quantities from exceptional vintages. Only the most magnificent fruit from Reschke’s oldest, low yielding vines is utilized in the Empyrean. Vinified using traditional fermentation techniques with subsequent malolactic fermentation and maturation completed in the finest, tightly grained French oak barriques, the Empyrean is a classic example of Coonawarra Cabernet. The grapes were hand picked and crushed to an open fermenter, yeasted with RC212 and fermented on skins before pressing.The wine matured in French oak barriques for 10 months completing malolactic fermentation and was bottled in February 2005. The 2004 season was characterized by a very warm, dry start with the hottest December on record. Dry but cooler conditions prevailed over the growing season. Vintage was late but the fruit achieved optimum ripeness and flavour intensity. This wine follows our previous releases in having good fruit expression but restrained use of oak and secondary wine making influences. <p>The pioneering plantings of Dolcetto at Catherine Vale are unique in the Hunter Valley of New South Wales. The initial cuttings were sourced from Bests at Great Western.</p> <p>The delicate smoky almond and earthy aromas have undertones of berry and white peach and some clove and oriental spice is the result of fermentation and maturation in American oak. </p> <p>Soft mouth entry and acidity herald rich mid palate fruit flavours of anise and fine tannin. Very pale straw in colour. </p> <p>Cut grass, meadow hay, and green fruits on the nose. The palate shows tropical and green fruits and honeydew melon with excellent intensity and length, finishing with bright, crisp acidity.</p> <p>The 2006 Chenin Blanc lends itself to a wide range of foods such as fish, crustaceans, vegetables and lighter spicy oriental dishes. Serve chilled at around 10ºC.</p> <p>This is the tenth release of Dowie Doole Chenin Blanc.
